Wow....that last recipe is a traditional French (Camargue region) method of preparing fish. That particular region has vast salt formations, hence the unorthodox use of salt in preparing their dishes.
I also didn't know Californians knew to sprinkle Fleur de Sel on their food... ha ha!!
