    Default Fish Taco Recipes?

    Anyone have a favorite grilled fish taco recipe? I've recently been introduced to Wahoo's fish tacos, and now I eat it at least once a week. So does somebody have a recipe for the marinade, salsa, toppings, etc.? Better yet, how do you make Wahoo's tacos?! My microwaveable dinners are not cuttin it...

    a good sauce:

    1/2 cup mayonnaise
    1/2 cup plain yogurt
    1 lime
    tsp cumin
    tsp dill
    serranos, jalapenos, habeneros, or ghost chiles to taste.

    This sauce is awesome. I've been using it for years. I add chopped capers and cayenne to it.

    Beer batter the fish and fry em up. I also add a home made pico de gallo and extra thin sliced green cabbage.

    Jezzus, I'm getting hungry.

    okay i know it should be simple, but how do you make your pico de gallo?

    Cut a tomato in half stick your finger in the holes to remove the jelly-like liquid (discard). Chop your tomatoe(s), onion(s), fresh cilantro and jalepenos. Throw it all in a mixing bowl and add fresh squeezed lemon juice. Let it chill in the fridge for an hour or so and enjoy.

    I make just about the same sauce, but I use Sour Cream instead of yogurt. I also like to get a can of chipotle peppers, and pour a little of the juice from the can into the sauce. little cabbage, and your good to go.

    oh, FWIW, I prefer blackened fish to fried. If you choose the battered route, Supermarkets carry Dan Hernandez beer batter and its pretty darn good! (hopefully it doesnt make you look like him, lol)

    oh, and when making your PDG, roast your jalapenos for a bit, before cutting them up and putting them in :-)
