Im running out of ways to cook the Dorado. ( I ended up with 70# of it)..

It is so delicious that I have eaten a ton of it in last 2 weeks.... Given away a ton also, and my freezer is still half full...

I have even BBQ'd some, and after Mahi Mahi Tacos, chipped the rest (it just falls apart) and made Dorado salad with Mayo etc and had it on crackers... Yummmmy stuff..

I would, but then I would have to kill you!!!!! :D :D

Simple and changes every time. Some times I roll the bits in flower with salt, Garlic etc. and Fry it up.. I even use the pan fried or BBQ'd fillets and just break off chunks and put them in the taco, with Cabbage, Cilantro, Sour Cream, Salsa & a squeeze of fresh lime...WOW great stuff any way I do it.

I have even mixed Wasabi & Soy, and used it as BBQ sauce. I have some stuff called WasabiYaki (soy, sesame seed, Fresh Garlic/ginger, dried onions, sugar, wasabi powder & some ? spices??) that is excellent also... Just go easy on it, strong flavor..
There is no wrong way to prepare Mahi, even Shashimi is outstanding.. :D

Being single and cooking just for myself (most of the time), makes for some unusual cooking habits. You could say Im in research and development (R&D) in the Kitchen...

What an awesome trip!

Thanks for sharing. I went to Cabo earlier this year and had blast too. I kinda wish that it was with a group like you guys did though. It seems a hell of a whole lot funner! It's a plus when you have a drinking rowd as well...
