An excellent and very easy formula is one I have used for many decades. I use a dish about 10 inches wide lengthy that has a top . Put an item of striper in that is almost provided that the dish .

Panko crusted Fish Filet: Recipe is as follows:
Ingredients:
Flour, Egg, Panko bread crumbs( most markets have this), Salt, pepper, any other seasonings
Take filet fish, lightly season the filet with salt pepper etc.
Put filet in flour and shake off any excess flour, next dip filet into beaten egg, lastly cover filet with panko bread crumbs.
Put in fryer or frying pan with oil at 365 degrees. Fry until golden brown.
amazingly crispy but moist
here is another healthy alternative:
Filet the fish with skin on:
marinate filets in a little soy, sugar, veg or olive oil for 30 min
with a hot pan, put fish skin side down, max fire. you want a good heavy pan so you can sear the skin to get it crispy. Flip and cook a few minutes on other side. Put pan in preheated oven at 350 degrees for 5 more minutes to finish.
The key part to this recipe is getting that really crispy skin
