    I've been using MORA fillet knives for quite awhile...around $25 and sharp. Here's the way I've been filleting trout...

    That is the way I use to clean my fish to get the skin off but for filleting it seems like more work than cutting off the fillet's then skinning them. Interesting might work well for the smaller trout I guess in the end it turns out the same and since trout have fairly thin skin it might be easier for some. Much better than the initial example on this thread!!!

    if you slice em up the belly then cut their head off all the guts will come out with the head
