    If cooked, lingcod. If raw, properly aged bluefin tuna.

    Tough call, since they're all so good...I'd pick Chilean Sea Bass (Patagonian Toothfish) as the best...it doesn't even need salt, but it's not on the list, and I don't eat it anymore since it's a major do-not-eat-unsustainable-fishery list member.
