Default Poll: Favorite Fresh Water fish for eating

This is for fun..... What's your favorite freshwater fish for eating?
I've left off Steelhead and Salmon because they are really saltwater fish.

Poll option was limited to 10, so it's more of a West coast poll. I've left off Muskie, Pike, Walleye.

Walleye are tied with crappie. You get a little more meat on the fillet with the walleye. Pike are good too but Californians are afraid of them.

Steamed crappie with ginger, garlic, green onions, and low sodium soy sauce baby! Made this way the fish tastes almost like a grouper or coral trout!
