    Default Christmas Eve Prime Rib

    BBQ'ed up a 20 lb Prime rib that was "melt in your mouth delicious"..

    Removed from grill with internal temp at 100 degrees.. Had a 40 min drive to my parents house and ofcourse everything else was running late so it sat for an additional 30 mins. By this time the internal temp hit the magic 125. Kinda worked out perfectly with pulling it at 100 degrees. Cooked for 3.5 hrs at 280 to 310ish [not including the thing cooking for the additional 1.5 hrs sitting wrapped up in its own juices.

    My gamble of pulling it early paid of.

    Base of "real" charcoal, {no briquettes} and chunks of hickory for smoke.

    Seasoned with liberal amounts of Pappy's

    Nothing went actually as planned, had the food at my parents been ready on time, my pb would of been undercooked. I had planned on cutting ends offs for the meal and thrown the center back on the grill,, luckily none of that needed to be done

    IM going to albertsons tomorrow to buy me a rib roast that looks ridiculessly good.
