    Default Fish Ceviche!

Im sure there are hundreds of ceviche recipes out there and a bunch already posted here...but heres mine anyway LOL

I had some fresh Yellowtail so i said why not make some ceviche.

Will make around 5 tostadas. The beauty about ceviche is you can add or subtract ingredients...depending on how you like it.

-1.5 pound yellowtail filet (you can also use Sea Bass, red snapper, sheephead...or any other firm fish filet. ive also made it with bonita and barracuda. Wasnt as good tho lol
-juice of 5 lemons or enough to cover fish
    -juice of 1 orange
    -half cucumber chopped
    -1 jalapeņo pepper diced
    -2 tomatoes chopped
    -cilantro
    -1/2 onion diced
    -salt
    -1 avocado sliced
-hot sauce of choice( i prefer tapatio)

    Step 1:

Cut fish filet into cubes. Put in a bowl and add lemon and orange juices. Make sure you have enough lemon juice to cover the fish. Let sit in the fridge overnight or at least for a few hours to give the lemon juice enough time to cook the fish. The color of the fish will turn from pinkish to white.

    Step 2:

Take fish out of Fridge and drain lemon/orange juice. Mix in the rest of the ingredients except for avocado and add salt to taste.

    Step 3:

Put some on a tostada, add avocado slices and some tapatio....ENJOY!

Pretty much the same recipe I use except I don't use cucumber and I usually add diced radishes and mango to it also. And sometimes bay shrimp if I happen to have any or remember to get it in the store. lol
