Default sake steamed fish with ginger and green onion

your going to need a steam rack

prepare a couple of filets of rock cod, lingcod, or wsb (i wish).

    in a pan pour
    1/2 to 1 cup sake
1/2 to 1 cup clam juice
small pile of fresh ginger diced or stringed. like a table spoon to 2 table spoons.
1 clove of garlic crushed and diced.

get to a boil and put the steam rack in the pot.

    lay fish down on rack
cover in diced green onions and drizzle with soy sauce. i also like that spicy asian hot oil.

cover the pan and cook for like 5 to 8 minutes.

when you're done remove the fish, place on top of some cooked rice and pour the juice from the pan on everything. you can top with cilantro if you want at the end too.
