I've left off Steelhead and Salmon because they are really saltwater fish.

Walleye are tied with crappie. You get a little more meat on the fillet with the walleye. Pike are good too but Californians are afraid of them.
I voted rainbow and catfish the best, but like panfish too.

Steamed crappie with ginger, garlic, green onions, and low sodium soy sauce baby! Made this way the fish tastes almost like a grouper or coral trout!
Nothing wrong with breaded and fried striper,imo.
Baked whole striper with clam stuffing!

I answered sunfish because walleye wasn't an option. Yeah, dredge fillets in Shank 'n Bake, fry and eat with tater tots... mmmmmm.

Bluegill in the 1 pound range are good. And Walleye
funny how rainbow trout has the most votes but yet i could go the rest of my life not eating trout and i would be fine.

I can't eat freshwater fish. I've tried catfish twice and I didn't care for it. Trout tastes like algae. I throw everything back. Now I fish mostly saltwater and throw everything back as well with the exception of legal sized halibuts.
Technically... wouldn't a Striper be a Saltwater fish also?
Here is the story I know...
They originally were found in the Atlantic Ocean(Virgina Saltwater State Fish) and would go into the freshwater rivers to spawn. I guess a lake on the east coast was dammed up and surprisingly the Striper population(that got stuck in there) did quite well adapting to the freshwater. They later farmed the striper and distributed them to freshwater throughout the US. In the DFG Sea Bass description page online it says they are a popular catch in the SF Bay under the Golden Gate Bridge.
...I would've said Salmon but I've never eaten a Kokanee Salmon.
Never even fished Eldo and don't fish much FW.

Could Stripers be considered kinda a 'Invasive Species'
I heard the love to eat small LMB, Trout ect.
See the numbers of these stripers coming in at lakes ect.
Are they hurting other populations ?

I just noticed this! Bluegill out of Lake Isabella deep fried with corn meal salt and pepper. Mmmm, simple but good.

I like the taste of a high Sierra cold water trout but the bones. AAAAK! I've eaten a thousand over the years and there is no way to get all the bones out. If I get one in my mouth I'm done eating. So I'd say Striper. BBQ, battered and fried, Ceviche.
I'm a blue gill guy. Shake it in a bag with cornmeal, a little Cajun spice and drop the fillets in 360 degree oil. I make tartar sauce with a dash of yellow mustard in it and I'm set.
Catfish cooked in coconut milk. With ginger, some chilis, and some malunggay. The best with rice!
In my opinion the finest freshwater fish for eating by far is the WALLEYE
