In April the wife and daughter are going on a
college tour trip up the coast for 8 days.
My son and I are going to fish everyday
while they are touring colleges. Which
if we get lucky and catch a fish will be catch and release.

However the second day of the trip, in Santa Barbara we are
going rock fishing on a 3/4 day boat. Rock fish
you have to keep, is there a way to keep the rock fish
for a week, on a hotel vacation, so you can go home
a week later and put it in the freezer and have fish
tacos for the next 3 months. Or do we have to throw the
fillets away?

i'd try dry ice in an ice chest.

just keep the ice insulated less from touching the fish and more from the sides of the box?

that's gotta keep the fish frozen... like rock hard frozen?

1) You don't have to keep them, give them away

2) Send back down with a heavy lead and potato chip clip, with a quick jerk.

3) You can try and find a place that will prepare them for you. Ask Exfactor ( Mikey ) he might know of a place. Since he lives up there.

4) Last, I personally wouldn't keep fillets for a week in an ice chest.

Have fun,
Robert

In Mexico, our hotel was nice enough to keep it frozen for us.

Give the fish to the guys on the boat, 8 days is way to long.
Plan B keep your daughter local, my son is bleeding me dry as a 3rd year student.
If you make over 40k a year, there's no help. Good luck on the rock fishing. As a dad I really wish you luck on the collegiate effort. My boy had a 4.3 it didn't matter. I sold the boat, a BMW, as a mid class income dad. it's better to keep her close. I rarely fish anymore and am looking for a second job to keep him living on campus. I'll pay for the first 4 years, after that he's going to have some skin in the game.

Yes I will definitely give the fish away now, and not try to keep them.

That's what I'd do. A tempura rock fish dinner is a terrible thing to waste.

give me a call when you return, and I'll throw them in my freezer for you to pick up when you come back. Preferably, get them filleted on the boat first. Glad to help if you'd like.

have keeped meat froze in a cooler for over a week camping out at the river in the 100 degree heat,,, need a GOOD air tight cooler,,, start with frozen meat 1st if at all possible, but it will freeze anyway ,,,then put the meat bagged up in a couple of ziplock bags in the bottom of the cooler with a 4 or 5 inches of H2o ice on top then put dry ice on top, get 2 or 3 of the 5lb(?) chunks/slabs, and plan on getting 1 a day to add on the way, just keep the lid closed tight as dry ice is a gas, open the lid and its gone,, would definitely have to have a plan on getting dry ice on the road, can be a real pain to find sometimes,,being where it not so hot may not use as much dry ice

That's what I'm talking about!

Cleaned filets, frozen.

Otherwise you've fished but no fish tacos for you!

I am pretty sure this'll work.

Off topic, but kudos to you for doing this for your son! My parents did that for me, which definitely gave me a leg up, and I plan to do that for my daughters. Of course, when I went to USC the tuition was $10K per year, and now its, well, I don't even want to know, quite honestly. I want to be able to sleep at night for the next few years!
