I do more C&R than keep, but would like to know what you all consider to be the best freshwater table fare in So Ca. Other than catfish I suppose for some.

Curious.

Thanks,

Striper is best for tacos and ceviche. Catfish is best deep fried. Panfish are best pan fried.

Any pan fish, crappie, bluegill or perch, crowley trout. Best to cook right out of water, roll it in mustard to take the fishy taste away, and some Louisanna fry mix in some hot grease.......

Anything really as long as the fish is fresh it will taste bomb. LOL I've had some fresh bullhead before and it wasn't half bad. Well, I can't exactly say that as water quality and forage really influences the fish's taste.

You don't have to go all the way to bbl for pink meat trout LNL has it they are good size and you can limit in no time at all. I love them smoked over rice! I have never had stripper so I can't speak for that but LNL MT Lassen Trout
Are DA bomb:Explode:

De-boned rainbow trout, stuffed with cooked scallops and bacon, then held shut with toothpicks, battered and rolled in corn flakes and Ritz crackers, then fried on low heat for 15 minutes.

A real pain to prepare, but when done right, ohhhhhhh man...

Mr. stripey gets the nod if I have to pick, but the rest (trout, catfish, panfish) all have their own niche depending on the way you prefer to cook your catch.

You should post your ceveche recipe....
