I took a guide trip with T/O and he left me with a freezer full of stripeys. Now whats a good way to cook em? I dont have those fancy smokers so no smoking just a nice recipe i can do at home. Show mw what you got. Thanks.

Here's one of my favorite recipies. It works well for Striper, Catfish, Crappie as well as Salmon, basically any fish

Marinate:
1/2 Teaspoon Minced Garlic Clove
1/4 cup olive oil
1 Tablespoon melted butter
1/4 cup Zesty Italian Dressing
Couple shakes Onion Powder
Couple shakes Italian Seasoning
Couple shakes Pappys Seasoning
Couple shakes Mrs. Dash
½ Squeezed Lemon

1. In a medium glass bowl, prepare marinade by mixing everything together
2. Place fillets in a Ziplock bag and cover with the marinade.
3. Marinate in the refrigerator 1-2 hours, turning occasionally.
4. Pre heat oven to 375
5. Place fillets in aluminum foil, cover with marinade, and seal.
6. Place sealed fillets in the glass dish, and bake for 35 to 45 minutes.

Serve with rice and your choice of vegetable.

I'll second SmooV's advice. I just recently started playing with Striper Ceviche. My last batch I "cooked" the striper pieces in 2/3 lemon and 1/3 lime juice for about an hour in the fridge. While that wa stewing I put together celery, cucumber, tomato, jalepeno, red onion and for balance some Mango. Salted that to bring out some of the juices. When the fish was done I strained out the juice it had been "cooking" in to eliminate any fishy taste and stirred it into the salad mix and poured on a bit of fresh citrus juice. Served with Avocado and hot sauce.... holy cow.


Rubio taco making.
equal amounts of beer and flour (1 cup each) mix and let stand a while
Just prior to dunking fish pieces pat them dry and even lightly dust with flour
fry in oil of your choice til golden

sauce
mayo and yougurt (again equal amounts)
garlic powder a dash to taste

Your favorite salsa recipe

Now, just make tacos pretty easy really

Can never go wrong with making ceviche. My fav

I was told by a sous chef not to ever eat raw fresh water fish. I'm not sure if Ceviche is actually cooked.

Lazy mans dinner
Wash your striper fellets and place in a glass backing dish.
Season with blk pepper, cajon seasoning, old bay, parsly, garlic powder on both sides.
Add about a 3/8"of butter.
Uses baby boc chow cut into quarters the long way to completely cover the fish.
Cover with aluminum foil and back at 350F for about 45 min. serve with rice and rolls.
It's simply good!

If you have fish over 3 lbs.
Fellet the fish and seperate the rib cage section (the bellies) .
Use conolia oil.
Peal and cut potatoes into quarters or eights depending on their size.
Season with pepper and cajon seasoning. Fy until they start to brown.
For the fish, mix yellow corn meal 90% garlic powder, pepper, old Bay, 5% Biskquick, about 2% itailian bread crums,
Place in a 1 gal zip bag and keep in the frige. Wash the fish and drain. Take a plastic bag and spoon inthe some of the cornmeal mix.
Add a few bellies at a time and shake. Stack them up on a plate
Fry until golden brown turning once.
Serve the fish & chips.

Serve the leftovers with grits for breakfast! That's what I had today. It was great!

An excellent and very easy formula is one I have used for many decades. I use a dish about 10 inches wide lengthy that has a top . Put an item of striper in that is almost provided that the dish .

Panko crusted Fish Filet: Recipe is as follows:


Ingredients:

Flour, Egg, Panko bread crumbs( most markets have this), Salt, pepper, any other seasonings


Take filet fish, lightly season the filet with salt pepper etc.

Put filet in flour and shake off any excess flour, next dip filet into beaten egg, lastly cover filet with panko bread crumbs.

Put in fryer or frying pan with oil at 365 degrees. Fry until golden brown.

amazingly crispy but moist

here is another healthy alternative:

Filet the fish with skin on:

marinate filets in a little soy, sugar, veg or olive oil for 30 min

with a hot pan, put fish skin side down, max fire. you want a good heavy pan so you can sear the skin to get it crispy. Flip and cook a few minutes on other side. Put pan in preheated oven at 350 degrees for 5 more minutes to finish.

The key part to this recipe is getting that really crispy skin
