I have managed to get by for some time, but would like to get some more in depth training on my fish finder.
Suggestions on who might be a great candidate would be appreciated.

Like was asked, what brand electronics do you have?

For Lowrance, Don Iovino has a good video as well as Doctor Sonar. Just google either one.
