i was fishing at lake isabella and we got some catfish. i didn't want to spend much money, so i bought some mayonnaise, corn tortillas, and a lime. i seasoned the catfish with garlic salt, lemon pepper, and some hot pepper flakes and put it in foil on the bbq. when the fish was done i just pulled off some meat with a fork, put it in a tortilla that was heated on the grill, smeared about a quarter tablespoon of mayo across the fish meat, then squeezed lime juice onto it all. it was really simple and quick and really good. i'm sure if you aren't as lazy as me you could get some shredded cabbage, tomatoes, salsa, etc. and make something fancy. also flavored mayo like chipolte mayo would be good. but this is great if you want to pack light and whip something up quickly.
