Is the yellowtail caught off of our coast the same as the yellowtail Japanese Sushi restaurants serve? why is the meat so much darker on the yellow in ca? Dam i feel like this is a stupid question...

You may be confusing the 'Yellow Tail' with the 'Yellow Fin' tuna..
The Yellow tail has white mild meat.
The Yellow Fin tuna has dark red meat that has a very beef like flavor.
Sushi in Japan is probably Yellow Fin or Blue Fin Tuna....

You may be confusing Yellowtail (amberjack) with the Yellow fin Tuna (Ahi)..

Yellowtail has a white mild meat.
The Yellow fin Tuna has a very dark red meat that has a tasty beef flavor.

Most Japanese Sushi & Shashimi are Tuna (Blue Fin or Yellow fin) Blue fin is the prized Shushi/Shashimi meat..

Sushi is made with a lot of different fish, a lot depends on what is available...

but in sushi restaurants they also call hamachi sushi yellow tail and its white when its raw. nvr mind answered my own question. It's a different kind of yellowtail that we eat in sushi restaurants.
