I still haven't got a good confirmation on the species of this Cat.
It had blood red fins and a golden/olive body.
Any ideas?

What you have there is a Yellow Bullhead. Browns have brownish mottling/spots on their backs and sides. There are 3 kinds of Bullheads and all 3 can be caught in SoCal... Black, Brown and Yellow Bullheads.

I concur with fishmounter. That appears to be a Yellow Bullhead, which is the kind found in Hemet Lake and Henshaw Lake. I also caught two of them at Perris Lake a few years ago, so they have gotten in there, but are uncommon there. I catch a darker kind at Gregory which are either Brown or Black Bullhead, but I am not as sure of their identification. I think they are Brown Bullhead, though.

My understanding is that they are very good eating. As good or better than flatheat, it's just hard to get them with any size.

Right on both accounts, I didn't get a whole lot of meat off the little guy, but it was good! Somewhere between good scrambled eggs and mashed potatoes.
Yellow Bullhead is on bottom of pic, I caught a bow that day too which is on top.
