I just got an E-Z UP and it's generally waterproof except at the seams. Do you guys have any advice on what I could use to coat the seams? Is there maybe a type of waterproof tape I could just run on top of the seams?

I have 6 EZ up's and I added some outdoor waterproof fabric tape to a couple of them .. it seemed to help a little...
I used this stuff.........
http://www.homedepot.com/webapp/wcs/stores/servlet/ProductDisplay?storeId=10051&productId=100662305&langId=-1&catalogId=10053&ci_src=14110944&ci_sku=100662305&cm_mmc=shopping-_-googlebase-_-D24X-_-100662305

I doubt you'll ever make them "waterproof"......... but you can make them more "waterresistant".
I also coated a couple with 3M Outdoor Scotchguard and that works great!

Have you tried tent seam seal. Available @ REI and Sport Chalet (maybe Wal-mart too, online @ Campmor). Tent seam sealers are made to waterproof seams on outdoor tents.

I have used camp dry by Kiwi on some tents and things before. It is a silicone based waterproofing spray that has worked pretty well for sealing fabrics. Be careful thought, it can mark some fabrics especially if you spray it on too heavy at once. You can get it at most stores in the shoe polish section. For the seams you can coat them with the spray too, or use a tent seam sealer to coat the stitching real well.
