so i just bought a meat dehydrator.. anyone have any good recipes or suggestions for meats to use and seasonings?

Have some london broil sliced thin by the butcher (1/8" - 3/16"). Make sure you trim ALL the fat from the edge, the fat is what goes rancid.

Take some soy sauce, teriyaki marinade, garlic, a little ketchup, a generous amount of brown sugar and mix it up. Place the marinade along with the meat in a ziplock bag in the fridge overnight.

After 12 - 24 hours, place the strips in the dehydrator (it's okay if they touch, just don't overlap them). I sprinkle a lot of coarse ground pepper and cayenne along with some red pepper seeds (as the slices dehydrate, they shrink by about half so your seasoning on the end result will be heavier). Follow the manufacturers instructions for dehydrating beef and you should be good to go. With a full dehydrator it takes me about 5 - 6 hours.

I make large batches (6-8 lbs) at a time, then vacuum seal grab-and-go size portions and freeze them.
