I am gonna be in San Diego on Mon and Tues, I called all the landings and they are not running any "twilight" fishing charters on them nights, so if I was to fish from shore, where should I go for a good bite???

Not sure what your looking to target.
An easy bet & easy access would be any of the Mission Bay areas. You can run spoons, most LMB bass stuff, or bait it up with Gulp etc... for spotties, halis, corvina etc... Under the bridges are classic spots as are some of the shoreline at the entrance of the bay (accessed via MB).
Southbay has a few public accesible spots, but I really can't help you too much there.
Just bring a stoutish LMB rod and you are set.
