What are oxbows? I assume they are some kind of trout but couldn't find anything.

Not familiar with "oxbows"...."Cutbows" yes, but, not oxbows.
Could it be a regional hatcher's name for their hybrids? You hear of a lot of colorful names (though etymologically nonsensical) that have more to do with marketing than fish identification.
