Every once in a while my freezer fills up, so I invite folks over to help empty out the freezer. We cooked deep fried calicos, sand bass, sculpin, and rockfish along with hush-puppies, and deep fried peckles. This year was special because my friend Yas came over and made yellowtail sashimi made from the belly.

Looks like good times and great food!

But to be honest, my heart sank when I realized this thread was not about a new Patrick Swayze followup movie to Roadhouse. :Sad:

You can get any kind of food at a Mississippi Roadhouse as long as it is
DEEP FRIED. Well I guess the coleslaw and the sachimi were an exception.

The secret to good deep fried fish is to use p-nut oil. It can stand a lot of heat and does not smoke.

Waterpossum's Seasoning

2 1/2 tablespoons of paprika
2 tablespoons of salt
2 tablespoons garlic powder
1 tablespoon onion powder
2 teaspoons pepper
2 teaspoons ground mustard
1 teaspoon cayenne pepper

This can be used to season fish directly or to season your batter.

Waterpossum's Pico de Gallo

Dice some white or red onion
Dice some tomato
Dice some jalepeno peppers
Chop some cilantro
Add a pinch of pepper and a pinch of salt
Squeeze the juice of 1 or 2 limes
Mix together

Use as a dip and some will be added to the hushpuppies


Waterpossum's Hush Puppies

Mix together
1 cup of corn meal and 1/2 cup of white flour
1 teaspoon of baking powder
1/2 teaspoon of salt
1 tablespoon Waterpossum's seasoning
2 tablespoons of pico de gallo

Beat together
1 egg
1/2 cup of milk

Add to dry ingredients and mix. Spoon drop mix into the oil and deep fry until golden brown. If you make the hush puppies too big they won't be cooked in the middle. Experiment to get it right.

Waterpossum's Deep Fried Fish Filets

Marinade filets for at least 1/2 hour
= Buttermilk with you favorite hot sause added for taste.

Batter

mix together
1 cup corn flour
1 cup white flour
1 tablespoon Waterpossum's seasoning

Marinade the filets, roll them in the batter, deep fry until golden brown.

Deep Fried Dill pickles

You can deep fry whole, spears, or slices. I prefer the slices. Batter the slices and deep fry them. I always start cooking with deep fried pickles as it flavors the oil making the results larapin.

Larapin = most excellent tasting.

Get your Bacon's and your Swayze's correct you pinko commie hippy from LA....

Tremors (shot in Lone Pine!) is another 7 degrees of Kevin Bacon. Not Swayze.

Komrad City_Dad, Homeland Security sees it all, and messing with fine American culture will land you in Guantanamo.
