Gary’s Beer Battered Striped Bass

Ingredients:

*Striper Fillets.
*Mckormicks Beer Batter.
*Granulated Garlic.
*Lemon and Pepper seasoning.
*Old Bay Seasoning.
*One bottle ”Flat” beer, I use Corona or simply a Budweiser, the flatter the better so leave it sit out early.
(Optional)-Seasalt (I add this from time to time).


Step #1.
GO OUT AND GET YOUR STRIPER SLAY ON !
Need I say more ?

Step#2.
*Lay out your Striper fillets and cut them into somewhat small “manageable” size strips.

*Generally about 3” x 2” x 1” or less strips works best but smaller if they are considerably thick (thinner is better).

NOTE: if you leave them too big and they are thick, you will end up “undercooking” them and you will miss out on the delectable tasty treat that it should be !

Step#3.
*Pour the batter mix in a large bowl.

*Mix the beer batter mix with the spices listed above, add the spices liberally, they really juice up the mix and add some zest into the mix.

*Stir them all together.
*Stir in the flat beer, stirring with a fork, add beer slowly and mix/stir as you go, stir thouroughly and add just enough beer to make the batter pastey but fluid enough to run off the fork slowly, this assures that it will bond to the fillets properly.

*Preheat deep fryer at about 375 degrees, I use canola oil but safflower oil works great too, just about any oil will work though.

Note: make sure it’s nice and hot before cooking !

Step#4.
*Add the fillets to the mix by simply placing them in the bowl of mix, stir with a fork gently.

*Make sure the entire fillet is covered in batter.
*Use tongs to remove the battered fillets from the bowl and place in the deep fryer.
*Add only a few at a time and allow them to slightly solidify by shaking the fry basket a bit then add more, this makes sure they do not all stick together.
*Fry until golden brown.

Note: do not overfill the fry basket and take your time cooking them, you may want to sample the 1st one to make sure they are cooking thouroughly plus the chef always has to sample the treats at this point, that’s part of the process !!!

Thanks gary, i've tried to cook them by soaking the fillets in corona then dipping them into a dry batter. Your way looks better. When i tried to use a wet batter i could'nt get the batter to stick to the fillets. I also used a large frying pan with about 1/2 to 3/4 of a inch of oil. I,ll try your way on the next ones i catch, that could be along time. :ROFL: :ROFL::ROFL: :ROFL: :ROFL: :ROFL:

Looks goo Gary...

My wife cooked up the stripies on Monday using the Mckormicks seasoning. They came out great. We haven't tried the beer batter one yet though so I'll have to try it the next time.

Yeah all of them are good, I've tried 'em....but the beer batter towers over all...

Run it up the flagpole...I promise you won't be dissapointed..

OK Gary. I just got some fish from Artimus. He followed your recipe I think. At least I know he used Mccormick's Beer Batter. DAAANNNG those were tasty. My wife is getting some mix right now. Now, all I need is a fish . Where can I get one of those?

Trolly tells me soaking the catfish fillet in milk for 1-2 hrs helps remove the gamier flavor, I might suggest adding that to the process if ur cooking kitties....I usually do the kitties in corn meal, thats how I've found them best cause that reduces the gamy flavor but I havent tried Trolly's suggestion about the milk yet, I suppose if the milk could take the gamy taste from it the regular beer batter would really rock....

Thats something I think ur gonna just have to try...

Maybe I suggest try a little of both...some soaked in milk and some not...that will give you a definitive conclusion on the milk soak process..

This recipe works for any fish. No need to pre soak catfish unless they seem to be older catfish. I like to roll the fillets in a little of the dry mix before dipping in the batter. Makes a little more batter stick to the fish. Thanks for the recipe Gary. I always love the flavor of the Bay seasoning with added garlic. Personally, I like to add a genorous amount of cayanne pepper too. :Cool:

Damn sounds good. They didnt have the beer batter one only Fish N Chips. Is there a big difference? Can I just substitute?

Not the same unfortunately, that will be good but nowhere near the same..

I know that brand is hard to find but trust me, it's worth it.

By all means use the other in the interim, in fact any others when the Mccormicks is not available but try to find the one I mention, it is the best I've found to date.

I've also been adding about 1/3rds of Don Cache's Cajun fish fry to it as well, that makes the batter a bit more crispy but it is not spicy.

Don't give up....keep looking, it's worth it !

It is great.. NohoFart cooked some up with Geordy bass and pops at the striperfest...Gary had mixed the batter first..

I used this recipe and it was quite good even though I used water in lieu of beer since my daughter didn't like the smell of the beer. I also added some cayenne pepper to spice it up a bit.

I've now added "Don cachare's" cajun fish fry to the mix (about 1/3 of the powder mix) it's makes for a crunchier batter..

That complete mix above with the Don Cacher'es mix is freakin awesome...

Here we go AGAIN...

U can substitute any of your favorite spices...I list the ones that I've found through trial and error that I thought complimnented everything...

by all means you can just run the beer batter with no spices and it'll be delicious...

Just find the Mckormicks beer batter... thats the key..

other beer batters are good...and other Mckormicks products are good (i.e. fish fry - tempura) but take the time to find the beer batter one...it'll be worth the while !

No, I got lucky and enjoyed a delicious meal out with great company :)- the best part, no cleaning dishes!!! Perhaps I will make it for Sunday night family dinner. That will give me a little time to go fishing : ) I think I might hit DVL or the beach tomorrow am. I heard there were tournaments today at DVL- I hate crowds!

Just made it for dinner :) It's all gone! I have a rather large family, kids bring their friends over- etc. So, I purchased two boxes of fry mix. Had some extra batter, so I made onion rings. Sorry, no left overs! My son stated the onion rings were better than Heroes- I will take the complement; however, I disagree... Heroes is the bomb!!!!

I don't have a deep fryer and I'm dying to try it ... any suggestions? I'll go get one if I have to ... but can you just use a pan with oil (any special oil? That wasn't 'mentioned)

Pan fry is fine but deep fry is better and quicker. I speak about the oil in the section where I say to preheat the fryer...
