Whisk 3 Grade AA with a teaspoon of water.

Coat the bottom of a heated Omelet pan with one teaspoon of Olive oil.

Then add a tablespoon of unsalted butter, making sure to coat the entire surface of the pan with the butter.

Pour the whisked eggs into the pan allowing the eggs to begin to set and then push them towards the center of the pan allowing the uncooked portions to flow underneath the parts that are already setting up.

Now place 1/2 cup of shredded sharp cheddar cheese, and 6 to 8 oz. of cooked trout on top of one side of the omelet.

You can also add some salsa or tartar sauce for a little extra spice if you so desire.

Now lower the heat to medium low and cover the pan for about 2 minutes in order for the eggs to firm up.

Carefully slid 1/2 of the omelet onto a plate and then fold the other half on top covering the 1st half.

Place some more grated cheese, sour cream, and 1/6th of a cup of diced tomatoes on top of the omelet.

Home fried potatoes would make a great side dish for this omelet.
