How do you guys cook your surf perch? Recipes?

Well, I've cooked them in the oven before, but the absolute best is when I'm camping and grilled them over the campfire. Just opened 'em up and put in some butter, garlic salt, and some random herbs and spices and grilled them skin-on until the meat is flaky.

everytime ive cooked them, which isnt that many, the meat has come out a little mushy. is there anyway of preventing this?

PAN FRIED w/ oil

add lemon and salt.

if it's mushy it's not cooked all the way

This is from the "gfs doing what we love best" thread, but these are perch i caught and grilled. if you're going to do it over a fire that metal mesh thing works really well. i think they may have been done already since i didn't have them over the flames.

u can make them just how u do tilapia or crappie...gut them out, put whatever seasoning u want on them, and cook em on the grill as u see in the picture that someone else posted. u can also do what someone else said and how i have done it...put cornstarch over the whole fish and fry it in a layerof oil on each side for a couple minutes depending on the size of the fish. serve with some fresh home made salsa and tortillas and call it a day :Cool:

When I was much younger, my father and brother almost exclusively target barred surf perch. Most of the time we kept our catch and prepared them by
"drying" the fish by salting the field dressed fish and allowing them to dry in a fish drying net. This causes all the moisture in the flesh to be removed causing the flesh to become more firm. Once the drying of the fish is complete, we would simply pan fry the fish or broil the fish in aluminum foil lemons and other seasonings.

They are no question good eating fish, but I wouldn't eat too many of them since they do forage on worms, shellfish and crabs (biomagnification).
