Cought my first cats the other day. Was recommended I put the Taco recipie here!
filleted the catfish like a striper being carefull to take as much meat as possible. Then I layed the fillets skin down and carefully sliced the skin from the fillet. Chop fillets into 1/4" wide pieces. Fill a small fry pan with cooking oil of your choice and preheat. dip the fillet cuts (no eggs, water or milk) into kraft brand "oven fry" fish frying batter. Drop them in the frier. When golden brown and a fork slides right through them, pull them out and set on paper towels.
You can also fry the soft taco shells in the hot oil for a minute or so on each side to produce your own awesome homade taco shells (very tasty!)
Slap a few pieces of fish in the taco and cover with black beans, fresh homade salsa*, lettuce or cabbage, shredded cheese, lemons and some hot sauce. I can eat four of these tacos myself, so this is the perfect dish for a stringer full of cats! Enjoy!
*For the homade salsa, Just chop about 2 to 1 tomatoes to onions. Then add lawrys, pepper, lemon and chives to taste. For hot salsa, add some sort of green peppers.
