got bored the other day and decided to experiment with some kind of salsa/sauce to put on my fish tacos to actually make them MY fish tacos and not just some generic fish taco. in my quest, i invented this:
ingredients:
1 lb. tomatillas
1 poblano/pasilla chile
1/2 to 1 jalapeno chile
1 or 2 avocados
1/2 to 1 cup fresh cilantro leaves
1/2 fresh diced white onion
4ish cloves of garlic
1/4 tsp. sugar
1/4 cup extra virgin olive oil
1/4 cup water
salt to taste
In a broiler, roast tomatillas until the skin is black and the tomatillas are extremely mushy. Also, roast the poblano until the skin is blackened. Once poblano is blackened, place in a plastic bag and let it cool. Dice the onion, garlic, and jalapeno. Place all ingredients in a food processor and pulse until smooth. Salt to taste and add water until you get to a consistancy that you like. I found this makes a great sauce on fish tacos if you mix it in a 1:1 ratio with some sour cream.
