Just picked up a Cardiff 200 to start fishing plastics on. What knot does everyone use?

Palomar & Trilene knots...
95% of the time...

Both have 2 wraps through eye of lure/swivel/hook... Easy & fast to tie, very good knots....

Clinch for just about everything.
Palomar for dropshot.

Modified trilene VG's knot for swimbaits.

palomar knot is the best.
never breaks for me.

Clinch, for 20 years, it has never failed me. Palomar for D/Sing, just like TJ said.
