View Full Version : pupusas (el salvadoran thick tortillas)
2 cups masa harina
1 1/2 cups warm water
1 tablespoon ground cumin
salt, to taste
pepper, to taste
6 ounces mild cheese (or the fillng of your choice)
1/2 cup fresh cilantro, chopped
Mix the masa harina, cumin, salt and water into a dough which is soft
but not sticky. Be prepared to add more flour if necessary. If it is too
dry, add more water.
To make a 3 inch round papusa, take about half a cup of dough and
roll it into a ball. flatten with your hand.
Put the filling in the centre [in this case, cheese, cilantro, salt and
pepper].
Work the edges up over the filling and again form a ball, completely
enclosing the filling.
Flatten each ball to about 1/4 inch or less and cook the papusas on
a hot, lightly oiled griddle for about 3 minutes per side, or until both
sides are lightly browned.

Thanks Skaguy, that clears things up a bit.
They look just like English Muffins.
I'll just go get some Thomas's English muffins, they are prolly about the same, right?
If I stuff some american cheese inside them that oughta be a pretty good approximation, huh?
Barbiegirl, preparar mi comida por favor. :D

I want mine to be fresh. I don't want them tasting like a cooler full of dead stripers.
Jesse, can your woman make them for us on your boat if she brings a griddle?
I'd like my papusas to be stuffed with avobada and quacamole please.

Man, Wifey and her mom make them every weekend and sell them by the dozen to people that they know.
Juan, I definately gotta get you on some freshly made pupusas, you'll love em bro, for sure...
O_L,
I feel the same way, FRESHLY MADE is the best way to eat them, however if you need to re-heat them up, PLEASE don't warm them up with the microwave, Use a skillet instead in low heat.
