I always thought the purpose of the beer was to make the batter raise so it is fluffy and crispy???

I wouldn't know. I don't like battered fish.

You can flatten the beer and it is a nice crispy batter , if you use bubbly beer it is more "tempura" ish.

Our fav is Dark beer (non flattened), bisquick, and seasoning (season salt, garlic etc etc) and some tasy stripers.

Not a damn thing better in my opinion!

I like to use a dark beer, Gold Medal's Wondra quick mixing flour and seasonings (pepper/garlic-fine grate/salt). Basic and good!
