I was in Baja this weekend and decided to eat one of these BSP I caught. I just removed the scales, gills and guts and grilled it whole with the head on, seasoned with garlic and lemon pepper.
It was OK in my opinion, the meat was a too little mushy for my taste. Any suggestions on preparing these?
