I was in Baja this weekend and decided to eat one of these BSP I caught. I just removed the scales, gills and guts and grilled it whole with the head on, seasoned with garlic and lemon pepper.

It was OK in my opinion, the meat was a too little mushy for my taste. Any suggestions on preparing these?

Dang it.

I would be very selective of where you catch your BSP.
Certain areas are notorious for high levels of bacteria and etc.

p.s. Next time try bleeding them as soon as you land them. It will slow down the meat from decomposing (which is why it turns to mush).

bsp meat will always be mushy, no matter what. you just have to fry the hell out of it untill its crispy

best results i got for bsp was poached
