Here's the recipe for the Vietnamese chicken roll. I don't call them EGG ROLL because there's no egg in it, I only used egg to seal the roll :).
You can use pork too.





Vietnamese’s Chicken Egg Roll.


Ingredients
2 lbs ground chicken.
1 bun bean thread (vermicelli) soak in warm water for 15 minutes and cut to 1” long.
2 carrots finely shred.
2 bun green onion, use only the white part, finely chop or ground.
2 teaspoon chicken bullion.
1 tablespoon Mr. Yoshida gourmet sauce (if you don’t have this sauce. You can use 2 teaspoon soy sauce and 1 teaspoon sugar).
2 teaspoon fish sauce.
1 egg, use only the yolk for sealing the roll.
1 package of TYJ Spring Roll Pastry 50 sheets (blue color, see picture).
Oil for frying.

Directions
Mix all the meat, bean thread, carrot and sauces together and let it sit for 30 minutes.
Put egg yolk in small bowl.
In a large plate peel 1 sheet of spring roll and lay diagonal and fold up 1 corner, spread the meat on top of the layer you just fold and then fold the 2 sides corner into the middle. Spread some egg yolk on the end of the sheet, so when you done with the roll, it’ll stay seal (see illustration pictures).
Make sure you roll it as tight as possible, so when you fry them it will not come loose.

Frying
Put a lot of oil in a deep frying pan, turn on the stove 400 degree for 15 minutes, to test the oil for the right cooking temperature, smash a glove of garlic and put in the oil, if it burn right way, the oil is too hot. If it boiling and slowly golden then it right temp.
Fry until they golden and enjoy .

That's a easy one to make ;).

Here you go.


Ingredients.

3 carrots finely shred (like the red bowl picture above).
2 tablespoonfull sugar.
3 tablespoon fish sauce (I used Viet Huong "3 crab" brand) you can use any brand for your personal taste....
10 tablespoon water.
2 teaspoon lemon juice.
Some fresh chili or chili sauce if you prefer hot taste.

In a large bowl, mix sugar, fish sauce, lemon juice and water together and keep stirring until the sugar disolved completely, add carrots in to the bowl and enjoy :lol:.
Add chili if you like.

YUMMY!

PS: I love to eat the rolls with green leaf lettuce.....wrap lettuce around the roll and dip in the sauce.....Man! I got to make some tonight!!!!!!!!!!!!!

Very good stuff indead! I just make some couple days ago and when I writed the recipe & sauce I want to make it again :rofl:.
