Easy Rainbow Trout Fillets in Hazel Nut Butter Dressing

Estimated time to prepare & cook 15 minutes

Ingredients:


4 Rainbow Trout Fillets, (scales removed)
Plain flour for coating
4 tablespoons Lightly Salted Butter
1/4 cup chopped, roasted hazelnuts
Fresh Flat leaf parsley chopped
Hazlenut oil

Directions:


Clean and rinse the trout fillets and pat dry.

Lightly coat the fillets in the flour on both sides and set aside.

Heat the butter in a non-stick frying pan, that is big enough to accommodate all the fillets, until sizzling.

Place the fillets, (skin side down) in the butter and cook for about 2 minutes.

Gently shake the pan; if the fish are stuck, cook them a little longer. When the fillets are browned, turn the fillets over and continue to cook until the fillets are firm and cooked through.

Remove the fish to serving plates.

Add the hazelnuts to the frying pan with the butter and heat through. Pour a little of this mix over each fillet (and aspargus) and finish the dish with a drizzle of hazelnut oil and the chopped parsley.

Serve with steamed aspargus.
