Cooking this tonight, hopefully it turns out good. Here's the recipe
INGREDIENTS
-2 1/2 pound Halibut steak, cubed
-1 red bell pepper, chopped
-1 onion, chopped
-3 stalks celery, chopped
-3 cloves garlic, minced
-1/4 cup olive oil
-1 cup tomato juice
-1/2 cup apple juice
-2(16oz) cans whole peeled tomatoes, mashed
-2 tablespoon chopped fresh parsley
-1/2 teaspoon salt
-1/2 teaspoon dried basil
-1/8 teaspoon dried thyme
-1/8 teaspoon ground black pepper
DIRECTIONS
1. Saute the pepper, celery, onion and garlic in oil until tender. Add the tomato juice or water, apple juice, mashed tomatoes and herbs. Simmer for 30 mins.
2. Add halibut pieces to the soup. Cook until halibut is done, about 30 mins. Salt and pepper to taste.
I'm serving it over steam rice.
