View Full Version : Pork tenderloin w/ chipoltle blackberry sauce

Super easy one guys! Impress your friends, impress yourself! Good make ahead for camping also!

Pork tenderloins- the small thin ones, not marinaded.
chipoltes in adobo sauce
1 tbs vegetable oil
Blackberry preserves
1 tbs butter


Mince up a chipotle pepper or two or three, to taste, and place in a gallon size Zip lock bag with the oil. Each tenderloin will serve around 2-3 people, depending on your appetite. Put in fridge for at least 3-4 hours to marinade. Can be marinaded up to 48hrs but watch the HEAT!

Prepare grill, and if you prefer, soak some mesquite chips for grilling.

Place tenderloins on grill, and close lid. Let smoke, turning occasionally, and cook till internal temp of 165 deg or juices run clear, about 20 min. Tent with aluminum foil for 5 minutes while preparing sauce.
Cut the tenderloin on bias and place medallions on plates with sauce drizzled over top.
Serve with garlic mashed potatoes or rice and black beans.

Blackberry Chipotle Sauce -
1/4 - 1/2 cup blackberry preserves
2-3 tablespoons adobe sauce from canned Chipotlies.
1tablespoon butter

In a small saucepan combine all ingredients.
heat until preserves and butter are melted and a smooth sauce consistency.
If there are seeds in the sauce, press through a fine mesh strainer. Serve drizzled over the tenderloin medallions. Sauce will stay good for about a week and is good in other meats.
